Centuries ago in Southern Brasil, gauchos (or cowboys) prepared their game and poultry with robust seasonings, flame-grilled, to bring out the richest flavors in the meat. In like manner at Paulo's Churrasco do Brasil, a vast selection of top quality meat and poultry is skewered and then slow-roasted to authentic perfection by 'passadors' who maintain close watch on the cooking process, and continually apply Paulo's famous marinade.
All this goes on while diners help themselves to a tempting salad bar where an array of traditional Brazilian dishes, hot and cold, is presented. Then when you are seated, the passadors will bring the meat to your table, piping hot and fresh off the grill, and keep on bringing it until you say NO MORE!
